This is a great recipe for any night you get The Call.
Everyone knows The Calll. Growing up, I learned to dread it. It’s the “We’re-in the-neighborhood-and-will-be-stopping-by-in-one-hour-and-can’t-wait-to-see-what-you’ve-done-with-the-place” call. And while the prospect of seeing the caller fills you with nothing but excitement and anticipation (hopefully), Grocery Shopping day is tomorrow and you have nothing edible to offer your guest other than the box of whole grain hot cereal in the pantry that never seems to disappear.
This biscotti recipe is oh- so -easy- made from pantry staples. Even better, it takes less than an hour total to make! You can have it out of the oven and ready to dip in a cup of coffee by the time your guests arrive!
Fear The Call no longer.
And, it is way tastier than hot cereal. I promise.
Quick and Easy Almond Biscotti
First, the cast of characters:
1 Stick of Butter, 1 1/4 cups of Sugar, 3 Eggs, 1tsp Vanilla Extract, 2 cups All Purpose Flour, 2 tsp Baking Powder, 2 tsp Milk, and a Dash of Salt.
And, now for the star of the show:
1/2 cup Almonds (or more to taste).
Preheat the oven to 375 degrees. I always forget to do this first thing, so I’m telling you now. Don’t forget!
Begin by blending the butter and 1 cup of the sugar together until creamy. Add the eggs one at a time, beating well after each addition. I use my handy dandy KitchenAid for this!
In a separate bowl, combine the flour, baking soda, and salt. Gradually add it to the creamed mixture. Add the almonds and stir until the mixture looks like this:
Line a baking sheet with aluminum foil and lightly grease it.
Divide the mixture in half and place them on the baking sheet in two somewhat even rectangles:
Put the tray in the oven and let those biscotti bake for 15 minutes, or until just golden brown. Place them on a cutting board to cool for another 10 minutes.
When they are cool to the touch, slice the biscotti loaves into 1/2 inch strips.
Turn each piece of biscotti on it’s side and place them on an ungreased baking sheet. Bake for 10 more minutes until golden brown and beautiful.
Serve with hot coffee or tea. Enjoy!
