I ‘m convinced it’s the little things in life that deserve big celebration. Small treats, like soft, new socks with a cute snowflake pattern, or coffee that’s brewed well, or a free afternoon on the first sunny day of spring, seem to have so much power over the big things- our attitudes, our big decisions, and our lifestyles.
Andrew and I love to celebrate life’s little moments. The first time I was published by Relevant Magazine, Andrew declared it “Rachael Got Published Day”, complete with a parade and homemade macaroni and cheese. We recognized Andrew’s half birthday with half of a cake and half of a card. New work for GuavaBox calls for blue cheese, red wine, and an unhurried walk in the warm Virginia weather.
Friday night is always cause for celebration. Andrew and I close our computers and make our way to the kitchen, talking about how glad we are to finally spend some time together. Which, admittedly, sounds a little lame, because I work from home a lot of the time and he works from home all the time, so we spend most of our week together anyway (complete with Pancake Morning Monday- who knew the working world could be so tasty?). Friday night means Pizza Night, and we love experimenting with different flavors and toppings.
Last week’s pizza was just a little unusual, and you have to try it to not think it’s crazy. It’s called Mushroom and Egg Pizza, and it is delicious! The egg gives the pizza such a rich, surprising flavor- A little recipe that gave us a big cause for celebration!
Mushroom Egg Pizza (Adapted from Real Simple Magazine)
1 batch of Pizza dough, rolled out (I used Martha Stewart’s dough recipe)
2 tablespoons olive oil
2 cups baby spinach
2 cups grated mozzarella cheese
4 ounces mushrooms, sliced
1 egg (or 2 or 3- however many you’d like!)
Bake at 425 until the crust begins to brown, 8-10 minutes. Carefully crack an egg on top of the pizza and return to oven. Bake until the egg whites are set- about 5 minutes.
