The past few weeks, Andrew and I have been hitting the road like runaway bandits.
We spent most of last week in Pittsburgh looking for a new place to call home (more on that later!) and then went our separate ways to celebrate the weddings of very dear friends in Ohio and North Carolina (more on that later!). In between, we spent one night at home.
With less than 15 hours to wash clothes, repack suitcases, and turn around again, I wanted to make something for dinner that would be easy, fast, and delicious. A while back, Andrew and I came up with this variation of pizza dough, and it turns out great every time! We were able to eat outside and enjoy a relaxing dinner together in the midst of a crazy week.
Knowing quite a few friends facing the same hectic schedules, I thought I would pass the recipe along to anyone else who needs an easy fix for dinner. Enjoy and Happy Monday!
Easy Pizza Dough:
2 cups flour
1 tsp. salt
3 tbsp. olive oil
1 small packet active yeast
3/4 cup plus 2 tbsp warm water
Mix the yeast and the water together in a small bowl. Allow it to stand for 10 minutes.
In a large bowl, mix together the flour and salt. Gradually add in the olive oil.
Finally, add the yeast/water mixture to the flour. Stir until just combined.
Cover with a towel and store in a warm place for 50 minutes, or until the dough has doubled in size.
